You would actually an issue with Muhammad and Allah not the gospel narratives. Because they appeal to the very gospel in which you disagree with you in reference to the term Dog being applicable to person by Jesus.
"It is He (God) who sent down to thee the Book in truth, attesting to what IS BETWEEN ITS (HIS) HANDS, and He sent down the Torah AND the Gospel BEFORE THIS as a guide to mankind." S. 3:3
Sense the Gospel is a guide to mankind in which means they must adhere to its guidance and Jesus is depicted as being the Son of man who will judge,and determine will they will spend eternity.
"For the Son of Man is going to come with his angels in the glory of his Father, and then he will repay each person according to what he has done." Matthew 16:27
Which would mean if Jesus is granted authority to Judge and repay mankind at the end times.. Doesn't it follow that we should trust Jesus's judgment when he refers to someone a certain way?
If not why in the world world Allah entrust someone with such authority of judging mankind and determining where they would spend their eternity if we can't take his judgement as reliable?
Its either be a faithful Muslim i.e accepting the Torah,Injill and Quran and accept that Allah has entrusted the Messiah to judge individuals which would make it justifiable for Jesus to refer to the woman as a Dog.
Or reject Islam for referring to the Injill as a guidance and depicting the Messiah as using a derogatory term in which you don't find acceptable.
